Homemade (almost) Ham and Cheese Pockets

I haven’t shared a recipe lately. It’s not that I haven’t been cooking, but I haven’t really had the time to be creative in my cooking. However, today I stumbled upon a super easy way to make a yummy lunch for my kiddos. We created these homemade (almost) ham and cheese pockets. It’s such a simple recipe, my baby even helped. Unfortunately, I was unable to get any pictures with my kids helping me.  You could say it was one of those moments.

This recipe consists of two ingredients – measured in handfuls, and a can of flakey biscuits. (Like I said, it was a fast, impromptu cooking moment.) All we used were two canned biscuits, a handful of pre-sliced ham for sandwiches – torn into little pieces, and a handful of grated cheese (I used a pre-grated variety for pizzas) for each pocket.

First, open the can of biscuits and separate them. Also, make sure the oven is preheating according to the biscuit directions. And, don’t forget to prepare the baking dish by coating it with cooking spray or butter.

Now that the prep-work is done, it’s time to make some yummy food.

Take one of the biscuit dough rounds and flatten it. I just used my hands and flattened it until it was about ¼ inch thick. It is possible to get the dough thinner by using a rolling pin, but I didn’t want to make more dishes.

After the dough has been flattened, take two slices of the deli ham, cut or tear it up into smaller pieces, and place the ham in the center of the biscuit dough. I had handed a piece of ham to the baby to keep her happy until I had lunch made. She watched me tear the other ham into pieces and promptly followed my example. When I placed my ham in the center of the dough, she also wanted to do the same. So, I let her. We had fun, tearing and placing ham.

Now, take a handful of the shredded (pizza blend) cheese and place it on top of the ham. I like the way the mozzarella in the pizza blend shredded cheese goes with the ham. You can use whatever style and flavor of cheese. Also, I used the pre-shredded cheese because, well, I was in a hurry – and that no extra dish thing I mentioned earlier. My baby was super excited to grab her cheese and place it on top of the ham.

Next, take another biscuit round and flatten it until it is the same size and thickness as the first round. This is to top the other round. If you used a rolling pin to flatten the first dough you probably don’t need another biscuit round, and can just fold the dough over to cover the filling.

Finally, twist the edges of the dough together to make a closed seam and place in the oven. I baked mine at 350 degrees Fahrenheit for 16 minutes.  After they were done baking, I let them rest on the pan for about 3 minutes, to help the interiors cool, before handing them to the “starving” masses.

These homemade (almost) ham and cheese pockets were a huge hit with my young ones. They loved that they didn’t need to use utensils to eat them, and the pockets were eaten faster than anything I normally serve for lunch.

    we love these at our house! My mom made these all the time growing up, and now I make these all the time for my kids! We use Rhodes roll dough though and add a few spices! Biscuits sound delicious!
